Black garlic is native to Asia (Japan, Korea, China). It is obtained by fermentation of fresh garlic. After fermentation, it contains less allicin, a compound responsible for the poor digestion of garlic in some people. It contains several elements: S-allyl-mercaptocysteine, allyl-cysteine, some fat-soluble organosulfur compounds, flavonoids and other essential nutrients such as selenium.
Information: It is "normal" garlic (white garlic, which is found in the trade) which has undergone different fermentations (time-temperature couple that varies). Bi-fermentation of garlic bulbs takes between 2 to 3 months.
